✔✔✔ WHO'S THE CHEF?
I was born in Rome on the 5th December, 1974 into an ancient noble family from Central Italy. The love of Italians for food dates back to very old times and in our culture it’s common to meet men passionate about cooking: as a matter of fact I was transmitted the love for food not from my grandmother, a skilled cook, but from my father. I’ve always worked in the restaurant industry: being my first job that of a restaurant kitchen hand, at the age of 15 I was already a pizza man using wood-fired brick ovens (not electric oven). I got trained in the kitchens of typical roman “trattorie” first, attending the culinary school only afterwards. I worked in Northern Italy and in an Italian restaurant in London for one year. I managed to work my way up to Michelin-starred restaurants such as La Terrazza at Hotel Eden in Rome (at the time a 2-star restaurant with Chef Adriano Cavagnini)

and last but not least – or as we say “dulcis in fundo” – to the only Italian 3-star restaurant, La Pergola at the Hilton Hotel in Rome, with Chef Heinz Beck

I love wine and olive oil, i have a few olive trees from my father, usually we use our oil after collecting and squeezed olives in November.

IN THE PHILIPPINES
I arrive in the Philippines on the 18th January, 2013 to help a friend – an italian Rogationist priest – with his orphanage in Silang,Cavite. Once the inspiring collaboration was over, I was in love with this country, its people, its tropical nature already: thus, I decided to stay. That’s when I realized that outside my country nobody knows what real Italian pasta is, as what is served is only a bad copy of it. It’s incredibly sad that pasta - a feast for the taste - is here constantly mortified by the same limited number of yucky sauces. My mission is to help filipinos discover the real Italian pasta and its creativity through my sauces and to make them understand why we have become popular all over the world.__________________________________________________
